What’s For Supper?

If you’re anything at all like me you dread hearing What’s for Supper? Its not that I’m a horrible cook, but I do have a hard time finding new and exciting recipes to try. We pretty much stick to the staples, and there’s little variance. If it isn’t broken why fix it right? Wrong!

Since pasta is a staple around this house I was pretty excited to find out about Ronzoni Smart Taste’s Recipe Collection! A vast selection of recipes, with a very easy to use search tool.

One of my favourite recipes features the use of cream cheese to make a delectable 3 Cheese Rotini Pasta Skillet. I love adding cream cheese to my favourite recipes to add flavour. I even add it to mash potatoes, and my Shepherd’s Pie has never tasted better!

3-Cheese Italiano/Rotini Skillet

Cook the rotini according to package directions. Drain well. Meanwhile, heat the oil in a large skillet with oven-proof handle set over medium heat. Add the onion and sun-dried tomatoes. Cook for 5 minutes or until the onion is softened. Stir the cream cheese, milk and wine or chicken broth into the skillet. Cook, stirring, until the sauce is smooth and creamy. Stir the cooked pasta, Provolone, Parmesan and lemon zest into the sauce until combined. Smooth the top. Meanwhile, preheat the broiler. Sprinkle the bread crumbs and basil evenly over the skillet. Broil for 1 to 2 minutes or until golden.

Ingredients:

3 cups dry Rotini
1 tbsp olive oil
1 small onion, chopped
3/4 cup chopped oil-packed, sun-dried tomatoes
1/2 cup light herb and garlic whipped cream cheese
3/4 cup milk
1/3 cup white wine or sodium-reduced chicken broth
3/4 cup shredded Provolone or Mozzarella cheese
1/4 cup grated Parmesan cheese
1 tsp finely grated lemon zest (optional)
1/3 cup fresh breadcrumbs
1/4 cup finely chopped fresh basil

I found this recipe today and I can’t wait to try it. What an awesome way to switch up the traditional spaghetti and meatballs!

INSIDE OUT SPAGHETTI AND MEATBALL

Heat oven to 375°F.

Cook pasta according to package directions; drain. Toss with 1/2 cup spaghetti sauce. Meanwhile in large bowl, mix together meat, bread crumbs, onion, eggs and seasonings. Divide meat mixture in half; on wax paper or plastic wrap, shape each section into a 12-inch circle. Place hot pasta onto center of one circle; sprinkle cheeses on top. Cover with remaining circle; seal edges, shaping meat into one large meatball. Using wax paper to help move meatball, place meatball on lightly greased broiler pan; remove paper.

Bake 25 minutes. Pour 1-1/2 cups spaghetti sauce over meatball; bake 20 minutes. Sprinkle with cheeses; bake 5 minutes or until cheese is melted. Let stand 5 minutes before slicing. Serve with remaining spaghetti sauce, heated. 6 to 8 servings.

Ingredients:

1-1/2 cups (6 oz.) Ready-RONZONI SMART TASTE ROTINI, uncooked
3 cups (30-oz. jar) spaghetti sauce,divided
2 lb. lean ground beef
1 cup fine dry bread crumbs
1/2 cup finely chopped onion
2 eggs
1 to 2 tablespoons dried Italian seasoning
3/4 teaspoon salt
1/2 teaspoon ground black pepper
Shredded mozzarella cheese
Grated Parmesan cheese

One of my all time favourite (quick, easy, and healthy too) recipes uses Fat Free Zesty Italian Dressing to cut the fat, and add a blast of yummy flavour. This recipe is from my personal collection, enjoy!

Zesty Italian Prawns

Cook pasta according to package directions (I prefer Angel Hair Pasta myself). Meanwhile in a skillet heat 1/2 cup of Zesty Italian Dressing, add in a half pound of peeled and deveined prawns. Cook prawns until they are done, remove from pan, add in mushrooms, and onions. Cook until tender. Toss Prawns, parmesan cheese, pasta, and veggies together. And enjoy!

I would love to hear your favourite recipes!

Happy Cooking!

Finding the Right Shorts

With the hot weather sinking in just about everywhere our thoughts are turning to keeping cool.  The shorts come out on mass, but how do you find the perfect shorts to fit your body?  Here are some tips from Celebrity Stylist Jeni Luciani!
Which shorts styles suit your body type best?
· Slim and slender: Try plaid or patterned shorts, as well as cutoff shorts
· Pear-shaped: Wider-leg shorts or the city short would work best on your figure
· Curvy: culottes or knee length shorts as well as the Bermuda short and city shorts are made to flatter this shape
Style Tip: Be sure to avoid pleats, pockets, or anything boxy and over-sized when it comes to shorts
Shorts for All Occasions
For Work and Casual Settings
· Bermuda Shorts: Bermuda shorts are great for work as they go well with the classic button down or even a tee look with a cardigan. There is usually a huge range of color options and it is a short that is flattering on most body types.

Take Bermuda shorts from work to play easily just by switching up the color.
torridbermuda
I love these Bermuda Shorts from Torrid!  A Steal on sale for only $24.99!
Instead of a khaki or black, opt for denim to make it more casual. Torrid has a vast collection of denim versions for summer that work especially well for plus-sizes.
Style Tip: To get the best look, keep the style simple with solid classic colors; it’s actually a very slimming short.
· The City Short:  The city short is a great go-to option for a casual professional setting, and also a great pick for curvier figures.
torridcitypant Style Tip: The cuff on city shorts should sit just above the knee (If you are looking to shorten them do not go above 3 inches!) The city short is not meant to fit tight, it is important you keep them loose feel for them to look great!
· Cargo Shorts:  These are a huge trend right now and a great casual short option. They are comfortable and lend space for fun, carefree summer days.
torridcargo Style Tip: With cargo shorts, try not to go a size bigger. Keep to your size, as the extra fabric of the cargos can lead to an ill-fitting danger zone.
For Evening

· Pick a “dressier” fabric such as silk, satin, gauzes, or cotton twill. This will immediately make the look more suitable for an evening appearance.
· The Roll Up or Bermuda short is one of the best options for evening.  Depending on both your size and your age you want to be careful how high you go with the Roll up.  Stick to no higher than 3 inches above the knee paired with an amazing wedge…Get that height!!
Accessories and shoes also play a very important role in dressing up shorts.  A black short paired with any type of cute dressy jacket or button down with just the right shoes and necklace can achieve a perfect evening look.
Rompers are another super cute option for an effortless summer look– day or night! Torrid has an amazing black romper that I love – another great plus-size option!  Keep it simple with the solid colors. The waistband gives you hips and makes for a simple yet sexy look.
torridromper And remember, always be careful not to go too tight or short with your shorts. Keep them fun and comfortable..You should never have to roll around on the floor to get the shorts on!! (and we are all guilty of doing that from time to time!!)
Thank you to Torrid for the wonderful tips on how to dress my body!!!!
In closing, the absolute most amazing way to dress up your shorts?  Shoes!  My choice?torridshoe Hello Snakeskin Peeptoe Heel – Rainbow!!!  In my best Stacey London voice” “Shut-Up!!!!”  Gorgeous!
Stay tuned for more from Torrid during the Back to School Shopping Guide!

The value of fore-thought and a good sale

I live in a small town, a pretty gosh darned isolated (leaving during the winter months is treacherous) small town in Northern BC.  We have Zellers, the nearest Walmart is an hour and a half away (as is the next town over).  So absolutely amazing deals are few and far between.

But today I happened across a 50% off the lowest yellow ticketing price sale at the Zellers Clearance Store.  And found a hum-zinger of an awesome deal for Tala’s 6th Birthday Party.

008 Regular Price of plain white tshirts: $4.97, marked down to $3.97, less 50%=$1.98.  A savings of $2.99 per shirt!

I picked up 11 shirts (all size 6 or 6x…. might have to grab some larger shirts depending on who Tala invites to her party – but I think that the 6-6x shirts are a good starting point – there are 2 smaller shirts in the pile for those of you with hawk eyes – those are for Malie) for $21.78.

The shirts will be our main activity at the party (Tala had a t-shirt decorating party a couple years ago and it was a huge success), and will form the majority of the goody bags.

All in all a great deal – a little fore-thought really does go a long way!

Here’s Malie pre-Tala’s Tshirt party – she insisted on wearing each and every tshirt that we had purchased!  She looks like the Michelin Baby!

Eleven Collection Shoes

Opinions of a Moody Mama currently has an awesome giveaway to win a pair of Eleven Collection shoes!  I adore Eleven Collection.  The quality is fantastic.  Finally a pair of shoes that doesn’t fall apart after a couple weeks of wear.

Giveaway ends July 6/2010!  So head on over today!

Psst… you can enter to win your very own pair of Eleven Collection Shoes at the Optimistic Beauty Blog during the Back to School Shopping Guide set to launch first week in August!

Two enthusiastic Thumbs Up!

By now most of you have heard me rave about Mabel’s Labels.  I absolutely adore the company to pieces.  Not only do they offer an amazing product, but the ladies behind the scenes are just freaking awesome!

Anyone who has school aged children knows just how often they come home missing half their stuff!  Thank goodness for Mabel’s Labels and their line of (you guessed it) Labels.

Mabel’s Sticky Labels were a huge help this year at the dance school, as well as during recital week.
Last year was a very costly year for us when it came to dance supplies.  We lost one dance shoe, bought a new pair, lost one of those… so we ended the season with a seriously mismatched pair of shoes (they were even 2 different sizes!).  Bought new shoes for September 2009, and made sure that we labelled those!  Tala’s ballet skirt also grew legs and walked away.  Non-intentional of course, but still adding cost to an already fairly pricey endeavour.

014 To be completely honest, I am amazed at how well the labels managed to stick to their dance shoes.  These particular labels were adhered 4 months ago, and they still look awesome, and are still firmly in place.  No edges starting to peel off on the edges, they look as perfect as they did when I put them on.

In addition to Tala and Malie’s dance shoes, we also affixed Sticky Labels to all their dance costumes.  When you have multiple girls running around back stage, all wearing the same costumes keeping track of who’s is who’s is definitely a challenge.  The girls made it through recital week (6 solid days of rehearsals and performances) without misplacing a single item.  Definitely an accomplishment!

Now that Tala is in school her indoor sneakers, backpack, snackpack, and jackets all have labels firmly attached to them.  It makes it easier for her to spot her items.  And considering the fact that we live in a small town with limited shopping possibilities being able to easily identify her items from a sea of identical shoes, boots, and coats is a huge blessing!

Check out Mabel’s Labels today!

NOVICA Review

A quick stop on my coffee break had me absolutely enthralled with my newest addition to my jewellery collection.  You see, recently I was contacted by Novica.com about presenting a review and/or giveaway to my readers.  I of course jumped at the opportunity to showcase such an absolutely amazing website.
020Khun Boom from Thailand created these absolutely gorgeous earrings called “World of Blue”.  The Kyanite Chandelier Earrings rotate with your movements to create a spell binding piece of jewellery sure to please!  The little details are what really set these earrings apart from the items that you find mass produced.  Even the ear hooks are a piece of art.
The presentation of the earrings was absolutely phenomenal.  Perfect for gift giving right out of the package.  You can tell that there is immense pride in their work, and I love the fact that Novica has made it possible for artisans from all around the world to make their products available to consumers throughout the world.  And all while adhering to the principles of Fair Trade.
033 One lucky Optimistic Beauty reader will be very happy in just over an hour when the winner in the Novica Giveaway is announced.
A huge thank you to the wonderful staff at Novica for the opportunity to review these beautiful earrings.

Ronzoni Smart Taste Spaghetti Review

As a family we love pasta.  So much so that it is quite possible that in a past time we must have been Italian!  So I was ecstatic when contacted by Mom Central to write a review on our favorite food (now if only they had sent a chef along with the pasta ;) ).

The challenge, sneak more health conscientious foods into our diets, without the kids noticing.  The end result?  Victorious!

Ronzoni Smart Taste Pasta is chalked full of added benefits, including added fibre, calcium, and vitamin D.
012 My girls did not notice a difference between the Ronzoni Smart Taste Spaghetti and our regular brand.  In fact Tala had seconds, and was ready for thirds!

From a Mommy stand point I found:
  • Ronzoni Smart Taste took longer to cook then our usual brand
  • Filled me up faster (must be that added fibre at work!  **this is my personal experience and does not represent any claims by the company**)
  • Tasted the same (if not better then our usual brand)
  • Is a kid friendly solution, especially considering that it looks much the same as our usual brand, unlike those super healthy Whole Grain pastas that the girls take one look at and know that they’re different
017Our entire family loved the Ronzoni Smart Taste Spaghetti.  I am sold on the added fibre and the benefit of feeling full faster.  The girls are sold on the taste.

“I wrote this review while participating in a campaign by Mom Central on behalf of Ronzoni and received products necessary to facilitate my candid review and photo contest entry. In addition, I received a gift card to thank me for taking the time to participate.”
