Since pasta is a staple around this house I was pretty excited to find out about Ronzoni Smart Taste’s Recipe Collection! A vast selection of recipes, with a very easy to use search tool.
One of my favourite recipes features the use of cream cheese to make a delectable 3 Cheese Rotini Pasta Skillet. I love adding cream cheese to my favourite recipes to add flavour. I even add it to mash potatoes, and my Shepherd’s Pie has never tasted better!
3-Cheese Italiano/Rotini Skillet
Cook the rotini according to package directions. Drain well. Meanwhile, heat the oil in a large skillet with oven-proof handle set over medium heat. Add the onion and sun-dried tomatoes. Cook for 5 minutes or until the onion is softened. Stir the cream cheese, milk and wine or chicken broth into the skillet. Cook, stirring, until the sauce is smooth and creamy. Stir the cooked pasta, Provolone, Parmesan and lemon zest into the sauce until combined. Smooth the top. Meanwhile, preheat the broiler. Sprinkle the bread crumbs and basil evenly over the skillet. Broil for 1 to 2 minutes or until golden.
Ingredients:
3 cups dry Rotini
1 tbsp olive oil
1 small onion, chopped
3/4 cup chopped oil-packed, sun-dried tomatoes
1/2 cup light herb and garlic whipped cream cheese
3/4 cup milk
1/3 cup white wine or sodium-reduced chicken broth
3/4 cup shredded Provolone or Mozzarella cheese
1/4 cup grated Parmesan cheese
1 tsp finely grated lemon zest (optional)
1/3 cup fresh breadcrumbs
1/4 cup finely chopped fresh basil
I found this recipe today and I can’t wait to try it. What an awesome way to switch up the traditional spaghetti and meatballs!
INSIDE OUT SPAGHETTI AND MEATBALL
Heat oven to 375°F.
Cook pasta according to package directions; drain. Toss with 1/2 cup spaghetti sauce. Meanwhile in large bowl, mix together meat, bread crumbs, onion, eggs and seasonings. Divide meat mixture in half; on wax paper or plastic wrap, shape each section into a 12-inch circle. Place hot pasta onto center of one circle; sprinkle cheeses on top. Cover with remaining circle; seal edges, shaping meat into one large meatball. Using wax paper to help move meatball, place meatball on lightly greased broiler pan; remove paper.
Bake 25 minutes. Pour 1-1/2 cups spaghetti sauce over meatball; bake 20 minutes. Sprinkle with cheeses; bake 5 minutes or until cheese is melted. Let stand 5 minutes before slicing. Serve with remaining spaghetti sauce, heated. 6 to 8 servings.

1-1/2 cups (6 oz.) Ready-RONZONI SMART TASTE ROTINI, uncooked
3 cups (30-oz. jar) spaghetti sauce,divided
2 lb. lean ground beef
1 cup fine dry bread crumbs
1/2 cup finely chopped onion
2 eggs
1 to 2 tablespoons dried Italian seasoning
3/4 teaspoon salt
1/2 teaspoon ground black pepper
Shredded mozzarella cheese
Grated Parmesan cheese
One of my all time favourite (quick, easy, and healthy too) recipes uses Fat Free Zesty Italian Dressing to cut the fat, and add a blast of yummy flavour. This recipe is from my personal collection, enjoy!
Zesty Italian Prawns
Cook pasta according to package directions (I prefer Angel Hair Pasta myself). Meanwhile in a skillet heat 1/2 cup of Zesty Italian Dressing, add in a half pound of peeled and deveined prawns. Cook prawns until they are done, remove from pan, add in mushrooms, and onions. Cook until tender. Toss Prawns, parmesan cheese, pasta, and veggies together. And enjoy!
